I've seen Cranberry, Brie & Rosemary Sourdough pull-apart bread all over my feed as a holiday appetizer, but I thought I'd try it as focaccia and it didn't disappoint 👌🏻. Use your favorite sourdough focaccia recipe, or here's mine 👇🏼 Ingredients: 400 (1 2/3 cups) warm filtered water 100g (1/2 cup) active sourdough starter 500g (3 3/4 cups) bread flour (or high protein all-purpose flour) 10g (2 tsp) salt 24g (2 tbsp) olive oil for coating + drizzling 1 wheel of Brie cheese (rind cut off and cubed) Cranberry sauce (measure with your heart) Sprigs of fresh rosemary Flakey salt Instructions: - The night before, mix your warm water and sourdough starter until frothy. Add your flour and salt and mix until there's no clumps. Keep in mind this is a high hydration dough, so it will be a wet dough. Cover your bowl and let rest for 30 minutes.  - Do 2 series of stretch and folds 30 minutes apart. After your last stretch and fold, transfer to an oiled bowl or container (around 14g of olive oil). Let bulk ferment on your counter overnight at room temperature.  - The next morning, your dough should be doubled in size and light and puffy. Grab your baking dish. I like to line mine with parchment paper. Add a layer of olive oil on the bottom, add your dough, and gently pull the dough to the shape of the dish (don’t pull too hard). Cover and let rest for a 2nd rise on your counter for a few hours (I let it rise for 4 hours). If you aren't ready to bake that day, you could stick it in the fridge and then pull it out and resume for the 2nd rise.  - Your dough will be ready when it’s expanded, bubbly, and jiggly. Preheat your oven to 425F. At this point, put your chopped Brie in the freezer (this helps bake evenly). - Once your oven is ready, drizzle your dough with a healthy dose of oil (I eyeball it). Dimple your dough with your fingertips. Add your chopped Brie (from the freezer), cranberry sauce, Rosemary sprigs, and flakey salt. Bake for around 30-35 minutes (or until golden).
