From scratch ep 5: SUNDAY ROAST 🔥👊🏻 A classic every british person should be able to knock together on a slow sunday I apologise, i deffo shouldve added more veg & stuffing 🤣 presentation was -1 but flavour was +10 Chicken: - lemon, garlic, thyme, tarrogon up the 🍑 - butter under the skin over the breasts - oil all over the skin with rosemary salt & pepper - oven at about 180-200 degrees c for around an hour. But really 45 mins per Kg + 20 mins is a good rule of thumb - take out half way and baste - then leave to rest for at least half hour Roast potatoes: - grab a baking dish ad cover with goosefat or any other oil - peel and chop - add to a big pot with cold water just above the potoes with plenty of salt - bring to boil for 5-10 mins - drain, steam dry and then add to the hot oil - roast at at least 200 degrees for 40 mins, take out regularly and turn the potatoes - finish with rosemary salt & parmesan Yorkshire puddings: - equal volume with egg, milk, flour in a jug - whisk with some salt & fridge for at least 20 mins - add oil to your yorkshire tins, get it hot ideally in a 220 degree C oven, but 200 degrees will be sweet - then add your mix to the oil, go back in the oven for 20-25 mins and dont open the door! Cauliflower Cheese: - pull apart the florets and chop the leaves - add to a baking dish with oil, salt, pepper and roast at about 200 degrees c for 20 mins or until brown - add a equal quantities of butter to a large baking dish with flour to make a roux then whisk in milk, salt, pepper to make a white sauce - grate in plenty of cheddar, a tsp dijon, mix in your cauliflower & top with parmesan - bake for at least 20 mins Carrots: - slice up, add to a pan - with butter, honey, salt, pepper, water (do bot cover the carrots completely) - stick a lid on and leave for 10 mins - add thyme, tarragon too! Gravy: - bisto is best lol - mix some in cold water, then add the chicken juices, hot water and get it THICCC Serve up and enjoy!
