@audreybakes: Hot Cocoa Banana Bread ☕️🍫 This is christmas in banana bread form 🎄✨ (Makes one 9x5 loaf pan) Ingredients: ½ cup (113g) unsalted butter, melted & slightly cooled 1 cup (200g) brown sugar, packed 2 eggs, room temp 1½ tsp vanilla extract 3 ripe bananas, mashed ¼ cup (60g) sour cream or greek yogurt, room temp 1¼ cups (160g) all-purpose flour ½ cup (50g) unsweetened cocoa powder ½ tsp cornstarch (optional) 1 tsp baking soda ½ tsp salt 1 cup (170g) semi-sweet chocolate chips Topping: Marshmallow fluff Chocolate syrup Freeze dried or mini marshmallows Christmas sprinkles *tip: if you don’t want the marshmallow fluff to be as sweet, mix in a tiny bit of salt and vanilla to balance out the flavor and let it sit a few minutes before proceeding. Instructions: Preheat oven to 350°F (175°C) and line/grease a 9x5 loaf pan. Whisk together the melted butter and brown sugar. Mix in eggs, vanilla, mashed bananas, and sour cream/greek yogurt until combined. In a separate bowl, combine flour, cocoa powder, cornstarch, baking soda, and salt. Add dry ingredients to wet and mix until just combined. Don’t over mix. Fold in chocolate chips gently. Pour batter into the prepared loaf pan. Bake for 50-65 minutes or until a toothpick comes out clean/with a few moist crumbs. (Tent with foil for the last 10-15 minutes if the top is browning too much) Cool completely. Spread a thin layer of marshmallow fluff all over the top of the loaf (mix it a bit first so it’s easier to spread). Drizzle with chocolate syrup and top with mini/freeze dried marshmallows and christmas sprinkles. Best eaten fresh!
