What is this liquid on top of my sourdough starter and is it dead? If you go to get your starter and you find a layer of liquid don’t panic it’s likely not dead. It is however very hungry. The liquid layer on top of your starter is called hooch. It is a combination of alcohol/water and is a byproduct of fermentation. It indicates that your starter is very hungry and has consumed its food source. The first thing you want to do is pour off the hooch (some people do like to stir it in. It will create a more acidic environment and acidic flavor. I prefer to pour it off, especially when it’s been quite a while and the hooch is very dark, which means it has oxidized. After pouring off check for any signs of mould which could be pink, orange, gray, green, black, etc. If your starter still looks ok then into a clean glass jar pour a small amount it will likely be very thin and runny. Feed a 1:2:2 ratio stir well and let it sit to see how long it takes for it to rise and bubble. You may have to feed a couple of times to bring it back and maybe not. It depends on your particular starter. This was a back up starter I forgot in my fridge and hadn’t fed in several months … after one feeding it was happy and showing signs of life.
