My childhood favourite snack. Crispy savoury pancakes with a ham and cheese filling 👌 If you want the full recipe for the crepes themselves, then head to my recipe app or Substack - both linked in my bio 🍽️😌 Ingredients: - crepes - cheese slices (vegan) - ham (vegan) - plain flour - breadcrumbs (I used panko) - vegetable oil for frying For the wet batter mix: - 2 cups soya milk (unsweetened) - juice from 1/2 a lemon - 1/2 tsp smoked paprika - 1/4 tsp garlic powder - 1 tbsp flour - pinch of salt Place one slice of cheese and ham in the middle of a crepe, fold over the sides and bottom, then roll it over tightly. Do this for as many crepes as you want and set them aside on a plate. Prepare your coating station by adding plain flour into one bowl, the wet batter mix into another bowl, and the panko breadcrumbs to another bowl - Use as much plain flour and breadcrumbs as needed to coat your pancake rolls. Coat the rolls in plain flour, then wet batter, and then breadcrumbs, making sure each roll is coated evenly. Shallow fry in vegetable oil over medium to high heat until all sides are crispy and golden brown. Once cooked, sprinkle a little salt over them and allow to cool. Serve with your choice of dip and enjoy! #pancakes #comfortfood #recipes #crepes
