VIRAL DATE BARK Only this one is made with White Chocolate, Raspberry Jam, Almond Butter, and a sprinkle of nutty Pistachios for your snacking pleasure!😉 I had to try this Viral Trend that’s going around the Internet, simply because I love Dates!  So I paired this Bark with a delicious white chocolate topping, not dairy-free though,  a raspberry jam made from frozen raspberries, a little lemon juice, and maple syrup. For the added protein, I added almond butter and a scoop of vegan protein powder to give this bark an additional boost of protein. Topped with crunchy pistachios, and Maldon sea salt. Maldon Sea Salt for topping Directions; 1. Line a baking sheet with parchment paper. Add your Medjool dates and press on each one with a jar to form a flat surface on each date. Repeat until all your dates are pressed together. 2. In a small saucepan add frozen raspberries, lemon juice, and maple syrup to cook on a low flame for 10-15 minutes, until the raspberries have broken down into a saucy consistency. Remove from the stove and set aside to cool for 10-15 minutes before adding to the Date Bark. 3. In a medium bowl add almond butter a tsp of melted coconut oil and protein powder. Stir to combine. 4. Begin by adding a layer of nut butter over the dates for the first layer, and follow with a tsp at a time of raspberry jam throughout the layer of dates. Follow with some melted white chocolate, and top with crunchy pistachios, and flaky sea salt. 5.
