@cooking_with_fire: Salt-Baked Beef Tenderloin | Smoked + Charcoal Seared 🥩🔥 Ingredients: • 1 whole beef tenderloin (4–6 lbs), trimmed • 2 tbsp olive oil or Dijon mustard • Black pepper, to taste • 8 cups coarse sea salt • 12 egg whites • Fresh rosemary & thyme for the bed • Horseradish sauce: ½ cup sour cream, ¼ cup mayo, 2 tbsp horseradish, 1 tsp Dijon, 1 tsp lemon juice, ½ tsp Worcestershire, salt & pepper Step-by-Step: 1️⃣ Rub beef with oil/Dijon & black pepper. 2️⃣ Mix salt + egg whites to damp sand texture. 3️⃣ Lay salt bed, herbs, then tenderloin on top. 4️⃣ Encapsulate fully with remaining salt. 5️⃣ Smoke at 300°F until 120°F internal. 6️⃣ While smoking, mix horseradish sauce. 7️⃣ Crack salt shell & sear over hot charcoal ~90 sec per side. 8️⃣ Rest 10 min, slice, and serve with sauce.
