Ingredients: 1c yellow cornmeal ½ c all purpose flour Creole or cajun seasoning Paprika Lemon pepper Herb seasoning mix (like Italian seasoning) Salt & pepper to taste Vegetable oil for frying 1lb catfish filets 2 large eggs whisked How to: Heat a large skillet over medium high heat with the oil for frying. The oil should be about 1 inch deep at least. In the meantime get a large bowl and combine the cornmeal, flour and all the seasonings. In another bowl add the catfish filets and season with a bit of salt and pepper. Pour the whisked eggs over the fish to coat. Check to see if the oil is read for frying, it should be between 350-375 degrees. When the oil is ready for frying, coat the fish one filet at a time. Shake off the excess egg and dip into the cornmeal mixture, coat really well and shake. Fry in batches, don’t overcrowd the pan. Fry for about 4 minutes per side or until the fish is a nice golden brown color. I like my fish fried hard so I’ll fry it for a while. Set aside on a wire rack lined with paper towels to cool and let some of the oil drain. Serve with your favorite sides and enjoy! Notes: The seasonings are really up to you and how much of each you would like to put. Sometimes I'll add some garlic and cayenne pepper as well. I like to use Home Cooking from Bold by Will Coleman for my herb mix
