I've just done the shutter speed at 1/1000 indoors to capture my son dancing. it captured him frozen but it doesn't allow alot of light in so it's quite dark.

This is not really at all helpful. ISO is the camera’s sensors sensitivity and giving people set environments to have specific ISO values is inaccurate. There are loads of other things to take into consideration, are you talking to a landscape photographer, or a wildlife photographer…? Also some cameras have base ISO’s and second base ISO’s where they are actually cleaner with less noise, at a higher value..
