🦆 Paella cu rata si stoc de rata, de la zero 🔹 1. Stocul de rata (baza gustului) Ingrediente: • 1 carcasa de rata + gat + aripi (sau o rata intreaga dezosata, pastrezi oasele) • 2 morcovi • 1 ceapa mare • 1 tija de telina • 2 catei de usturoi zdrobiti • 1 frunza de dafin • cateva boabe de piper • 1 crenguta de cimbru • 2,5 – 3 litri apa rece Preparare: 1. Rumenește oasele de rata si legumele (taiate grosier) in cuptor la 200°C timp de 30-40 min, pana prind culoare aurie-maronie. 2. Pune totul intr-o oala, acopera cu apa rece si adauga condimentele. 3. Lasa sa fiarba usor (nu clocoteasca tare) timp de 2,5–3 ore. 4. Strecoara si pastreaza stocul clar. 👉 Poti sa-l reduci putin ca sa concentrezi gustul pentru paella. ________________________________________ 🔹 2. Paella propriu-zisa Ingrediente (pentru 4 portii): • 400 g pulpa de rata (fara oase, taiata in bucati mici) • 2 linguri ulei de masline • 1 ceapa mica • ½ ardei rosu • 2 catei de usturoi • 1 rosie bine coapta (sau 2 linguri pulpa de rosii) • 1 lingurita boia dulce afumata • 250 g orez pentru paella (arroz bomba sau calasparra) • 750 ml stoc fierbinte de rata • sofran (un varf de cutit, infuzat in putin stoc cald) • sare, piper • 100 ml vin alb sec ________________________________________ 🔹 3. Preparare pas cu pas: 1. Prajeste rata: In tigaia de paella, pune uleiul si rumeneste bucatile de rata pana devin aurii si usor crocante. Scoate-le pe o farfurie. 2. Fa sofrito-ul (baza de gust): In aceeasi tigaie, adauga ceapa, ardeiul si usturoiul tocate marunt. Gateste la foc mic 10 min pana se inmoaie si devin dulci. Adauga rosia si boiaua, continua 5 minute, pana scade bine. 3. Adauga orezul: Pune orezul si amesteca 1–2 minute ca sa se imbrace in ulei si arome. 4. Rata la loc: Pune bucatile de rata. 5. Lichidul si sofranul: Toarna stocul fierbinte si sofranul infuzat. Nu mai amesteca din acest moment (ca sa se formeze crusta – socarrat). Gusta si potriveste de sare. 6. Gatit lent: Lasa la foc mediu 18–20 minute, pana orezul e gatit si lichidul absorbit. Daca pare uscat prea repede, mai adauga putin stoc fierbinte. 7. Odihna: Dupa ce e gata, acopera tigaia cu un prosop curat si las-o 5 minute sa se „aseze”. ________________________________________ 🔹 4. Servire • Adauga pieptul de rata feliat frumos si caisa coapta pentru o combinatie perfecta 🍷 Sangria clasica spaniola 🔹 Ingrediente (pentru 4–6 pahare): • 1 sticla (750 ml) vin rosu sec, fructat (Tempranillo, Garnacha sau un Merlot bun) • 60 ml brandy (optional, dar autentic) • 1 portocala – taiata felii subtiri • 1 lamaie – taiata felii subtiri • 1 mar – taiat cuburi • 1 lingura de miere • 250 ml suc natural de portocale (sau un mix cu putin suc de mere) • 200–250 ml apa minerala carbogazoasa rece (pentru final) • Gheata din belsug
