WELCOME TO EGGS FROM AROUND THE WORLD 🍳🌍 welcome to eggs from around the world. my brand new mini series where I’ll be showing you how to make the best egg dishes the world has to offer.. this is episode 7 where will be taking a trip to India, to make some Kerala Egg Puff ! Full recipe below (Makes 6 egg puffs) 3 eggs hard boiled 1 tbsp ghee Thumb of ginger diced 3 garlic cloves diced 1 green chilli diced 1 red onion sliced 3 medium tomatoes diced 1 tsp kashmiri chilli powder 1/2 tsp turmeric  1 tsp garam masala 5 curry leaves 1 tsp black pepper 1 tsp salt 100ml water Sheet of puff pastry 1 egg for egg wash Step (1) In a larger skillet, heat up 1tbsp ghee, then add the diced ginger, garlic and chilli. Saute for 30 seconds on a medium heat, then add the sliced onion. Season with salt and cook for 5 minutes on a medium heat until soft Step (2) Add the tomatoes, then season with chilli powder, turmeric, garam masala and curry leaves, mix well and cover for 10 minutes. The tomatoes should be crushed and had released its juices. Now remove the lid and add 100ml water and let simmer uncovered for a few minutes until it reaches a thick stew consistency, set aside and allow to cool until it reaches room temperature Step (3) Pre heat the an oven to 180C. Layer you puff pastry into large squares, add a tsp of the masala followed by half a boiled egg, fold the pastry until you form a box, then brush with the egg wash. Repeat for each puff, then place in the oven and bake for 15-20 minutes, until crispy and flakey. Serve with some ketchup or hot sauce, enjoy :) #egg #eggrecipe #indianfood #desifood #series #fyp
