*NEW RECIPE* SAVE NOW Mini Afelia AKA my daughter is always watching food videos, she came across this recipe one day and made it for us, it was so good that I wanted to try it out myself. The recipe is a cross between tacos and quesadillas - the edges are crispy like tacos, the centre is soft and gooey like a quesadilla! 😋 Shout out to @Ninja UK, the Ninja Stackable Chopper has become my favourite tool in the kitchen of late and so many of you have told me you love it too! 🥰🫶🏼 LASAGNE TACOS (makes 8 tacos) You will need: For bolognese: • 1kg chicken/lamb mince • 1 large onion, chopped • 5 cloves garlic, chopped • 2 - 3 tbsp olive oil • 1 - 1.5 tsp salt (adjust to taste) • 1 can chopped tomatoes, pureed • 1.5 tsp mixed herbs • 1 tsp black pepper • 1 tsp garlic powder • 2 OXO cubes For cheese sauce: • 3 tbsp butter • 3 tbsp plain flour • milk, as needed (I add water to thin out my cheese sauce also) • 150g grated cheddar • salt if needed (I didn't add any) For assembling tacos: • tortillas • olive oil • extra grated cheese (cheddar or mozzarella) Method: 1. Saute onion + garlic in olive oil with salt until translucent. Add mince and cook until it changes colour. 2. Add chopped tomatoes, mixed herbs, black pepper, garlic powder + OXO cubes. Let this simmer over a low heat until rich in colour and oil rises to the top. 3. In a separate pan melt butter + flour, cook until it forms a roux. Add milk SLOWLY, ensuring you incorporate it every time before adding more. I add some water to my white sauce to prevent it being too rich, you can use just milk or add some water like I do. The consistency shouldn't be too loose or too thick, lastly add grated cheese and stir till melted. 4. Assemble the tacos - in a frying pan (cast iron is good for this) add some olive oil and place a tortilla, fry till lightly golden. To one half add cheese sauce and bolognese, then flip the other side over, add more cheese sauce on top along with some grated cheese. You can pop a lid on top to help melt the cheese or place the taco under a grill, serve immediately with sides of your choice and enjoy! #afeliaskitchen #lasagnetacos #tacos #foryoupage #ninjachopper
