Start by slicing the courgette into very thin strips. Place them side by side on parchment paper, slightly overlapping, creating a solid base without gaps. 2. In a bowl, mix all the sauce ingredients together. Add in the diced avocado, mango, and chopped mint leaves. Stir to combine. Then fold in the chopped shrimp and mix gently until everything is coated. 3. Spoon a line of the mixture down the center of the courgette strips, running vertically. Gently start rolling from one end, keeping it tight as you go - take your time and don’t rush, it’s easier than it looks! 4. Once rolled, slice into bite-sized pieces to create sushi-style courgette rolls, just like in the video. 5. Finish with a sprinkle of sesame seeds and fresh parsley on top. Leave it in the fridge for 10min. Enjoy!
