Season the Fish Pat the fillets dry. Sprinkle salt, pepper, and chili flakes on both sides. Add lemon zest on top for extra aroma. 2. Pan-Fry the Fish Heat olive oil + 1 tbsp butter in a pan. Place fish fillets and cook: 3–4 minutes per side (until golden and flaky). Remove fish and set aside. 3. Make the Lemon Butter Sauce In the same pan: Add remaining 1 tbsp butter. Add garlic and sauté for 30 seconds. Add lemon juice. Let it bubble for 20–30 seconds to slightly thicken. 4. Combine Pour the lemon butter sauce over the cooked fish.
