Ingredients For the ice cream: · 200g croissants · 300ml heavy cream (30-35%) · 400ml milk (3.2-3.5%) · 3 egg yolks · 60g sugar · 1 tbsp cornstarch · Vanilla extract For the waffles (6 servings): · 240g figs (or fig purée) · 1 egg · 120ml milk · 60ml cream (20-30%) · 105g sugar (reduce to 90g if figs are very sweet) · 60g melted butter · 240g flour · 2.5 tsp baking powder Instructions Making the ice cream: 1. Dice croissants, spread on parchment paper, and dry in oven at 160°C for 5-7 minutes. 2. Heat cream and milk in saucepan to 60-64°C. 3. Whisk egg yolks with sugar and cornstarch until smooth. 4. Place dried croissants in separate bowl. 5. Temper yolk mixture with warm cream mixture, then cook over low heat stirring constantly until 74-80°C. 6. Blend remaining cream with croissants until smooth, strain through sieve. Combine with custard base, add vanilla. 7. Churn in ice cream maker according to manufacturer's instructions. Making the waffles: 1. Remove fig stems and blend into purée. 2. Combine fig purée with egg, milk, cream and sugar. Add melted butter, sifted flour and baking powder. Mix until just combined. 3. Bake in waffle iron for 3-5 minutes. Assembly: 1. Plate waffles, garnish with fresh fig slices, and top with scoops of croissant ice cream. Enjoy! #reinavelcheva #byvelcheva #foodaesthetic #croissant
