BUFFALO CHICKEN SALAD 🥬🍗🔥 This salad is soooo good 🙌 Even my husband who usually doesn’t like salad LOVES this one!! It has so much flavor and only takes about 25 minutes to make, so is perfect for busy weeknights! Salad ingredients:  - 1 large chicken breast  - 2 tbsp blackened seasoning  - 1 tsp olive oil  - 1 head of romaine, chopped  - 1 cucumber, sliced  - 1/2 cup cherry tomatoes, halved - 1 carrot, grated  - 1/4 of a red onion, thinly sliced  - 2 tbsp buffalo hot sauce  - 2 tbsp crumbled blue cheese for topping - 1 diced green onion for topping Homemade blue cheese dressing:  - 1/2 cup full fat plain greek yogurt  - 1/4 cup crumbled blue cheese - 2 tbsp vinegar (can use white vinegar, apple cider vinegar or lemon juice) - Salt + pepper to taste How to: - Butterfly the chicken breast then pound out to about 1/2 inch thickness.  - Season both sides well with blackened seasoning.  - Heat olive oil in a skillet, then sear chicken for 5-6 minutes per side or until cooked through.  - While the chicken is cooking slice up all of the veggies and make the blue cheese dressing by whisking together all of the ingredients.  - Add romaine and sliced veggies to your plate, then top with sliced chicken. Drizzle on blue cheese dressing and buffalo sauce.  - Garnish with crumbled blue cheese and diced green onion.
