Drop a ๐Ÿ’› in the comments if youโ€™d like to see the Moroccan chicken alternative recipe ๐Ÿ‘€ Ingredients 2 cups quinoa 2 cans chickpeas 1/4 cup olive oil 4 garlic cloves 1 onion, diced 1 carrot, diced 1 tsp paprika 1 tsp turmeric 1 tsp ginger 1 tsp cumin 2 tsp ground coriander 1 tsp salt 1/4 cup fresh coriander 1/4 cup fresh parsley 1 lemon, sliced 1/2 cup pitted green olives 3 tbsp olive brine Directions 1. Preheat your oven to 180ยฐC (350ยฐF). 2. In a baking tray, combine 1/4 cup oil, onions, garlic, carrot, and spices (paprika, turmeric, ginger, cumin, ground coriander). Roast for 10 minutes until veggies are golden. 3. Dissolve a stock cube in 3 cups of boiling water to make vegetable stock. 4. Remove tray from oven, stir in chickpeas, green olives, quinoa, and the stock. 5. Cover with foil and bake for 40-45 minutes until quinoa is tender. 6. Fluff the quinoa with a fork, drizzle with lemon juice, stir in olive brine, coriander, and parsley. 7. Serve as a main dish, side dish, or portion into containers for meal prep.
