@andrejcooksfish: COOKING EVERY FISH IN THE WORLD 🐟 🌍 Episode 100 - Clown Anemonefish / Ocellaris Clownfish • BIN: Amphiprion ocellaris FR: Poisson-clown à trois bandes / poisson-clown ocellé DE: Falsche Clownfisch / Orangeringel-Anemonenfisch ESP: Pez payaso común / falso pez percula IT: Pesce pagliaccio ocellato SRB-CRO: Riba klovn • Ingredients (15-20 canapés): 15-20 clown fish (or any marine fish of similar size) Mayonnaise base: 1 egg yolk 1 tbsp Dijon mustard 200-250 m grape-seed oil Black mayo: 1-2 cloves black garlic 1 tsp squid ink Orange mayo: 0,2 g Saffron 1 tbsp tomato paste Cream dip: 3 tbsp cream cheese 1 tbs crème fraîche 1/2 lemon zest Spring onion (garnish) • Recipe: 1. Cut the fish into a butterfly fillet as shown in this reel and secure with two needles. 2. Nemo dip: whisk up the mayo, divide into two parts and combine with the respective ingredients. Do the same with the two creams. 3. Matsukasa-yaki: place the butterflied fish skin-side up onto a rack and gently ladle over 220C hot oil until golden crispy.
