Three Cheese Steak Sandwich This is the first recipe I ever nailed over 10 years ago, and I’m still making it today. It’s Melissa D’Arabian’s three cheese cheesesteaks from the old Food Network days, with a few tweaks of course.  It stretches a single steak to feed the whole family, and works just as well with chicken. Ingredients:  1 steak (sirloin, ribeye, or whatever you like) or 2 chicken breasts, sliced thin against the grain  Salt, pepper, garlic powder, onion powder, chili powder to taste  1 bell pepper, thinly sliced  1 onion, thinly sliced  4 oz cream cheese (half a block), cubed  6 slices American cheese  4 slices provolone cheese  4 sub rolls or similar bread Instructions: Slice the steak as thin as possible, cutting against the grain for tenderness. Season with salt, pepper, garlic powder, onion powder, and chili powder. Heat a skillet over medium-high heat and sear the steak for a few minutes on each side until cooked through. Remove from the pan. Add sliced peppers and onions to the skillet and sauté for 3 to 5 minutes until softened. Return the steak to the pan, add the cream cheese and American cheese, and stir until melted and combined into a creamy sauce. Toast sub rolls lightly under the broiler, fill with the steak mixture, top with provolone, and return to the broiler just until the cheese is melted.
