RASPBERRY LEMON CAKE🍰🍋(gluten free, dairy free, refined sugar free) A cake that’s made with simple ingredients, easy to make, and tastes delicious? Now that’s MY kind of birthday cake😍 I loveee how this cake turned out, super moist and fluffy and bursting with flavor from the fresh fruit. I can’t wait for you guys to try it!!  Wet Ingredients:
-4 eggs -3/4 cup coconut oil -1 cup maple syrup -1 cup coconut milk -1 tbsp vanilla -2 tbsp lemon juice  Dry Ingredients: -1 cup coconut flour -1/2 cup tapioca flour -3 tsp baking powder -1/2 tsp baking soda -Zest of 2 small lemons  -1 tsp salt Frosting: -1 can coconut cream, top of cream only not liquid (refrigerate can overnight)*** -1-2 tbsp maple syrup (depending on how sweet you want it) -1 tsp vanilla Jam: -1 cup fresh raspberries  -1 tbsp maple syrup -1 tsp lemon juice -1 tbsp cornstarch (for thickening) How to: -preheat oven to 350F and grease two 7inch or 8inch springform cake pans -to a small bowl add eggs and oil, mix well -add remaining wet ingredients to the bowl and combine well -to separate bowl add all dry ingredients, mix well -pour dry ingredients into wet ingredients and mix until a batter forms -pour batter evenly into each cake pan and bake for 30-35min or until a tooth pick comes out clean -while the cake is baking make your frosting by combining all frosting ingredients to a large bowl (just the coconut cream part, not the liquid from the can) and mix with handheld mixer until smooth and fluffy, place frosting in fridge to set while cake is cooling -make your jam by adding the raspberries and maple syrup to a small sauce pan, stir continually over medium heat, and bring the jam to a boil, once boiling add the lemon juice and cornstarch, stir, and boil for about 15min, reduce the heat and pour jam into a bowl, place in fridge to harden while cake cools  -wait until cake is completely cooled before layering with jam and frosting, decorate with fresh strawberries and lemon zest, enjoy!
