There’s something about a cold, rainy payday that makes grilled food taste even better. The kind of day where you want heat, spice, and freshness all on one plate. So I brought the sunshine to my kitchen with suya‑style chicken skewers, smoky, juicy, and packed with that bold flavour that never misses. Paired with crispy roasted potato wedges and a refreshing salad, this combo is the perfect balance of comfort and brightness. Ingredients for chicken skewers Chicken thighs  Salt Cajun seasoning Garlic powder Ginger powder Maggi seasoning Chilli infused oil Suya spice Onions Bell peppers(Red,green,yellow) Ingredients for roasted potatoes Potatoes Salt Bicarbonate of soda Beef stock seasoning Rosemary Fresh garlic Paprika (optional)  Cooking method To make my roasted potatoe wedges. I simply washed my potatoes and cut them into the desired shapes. I went with skin on potatoes today and I put them in room temperature water and add water, beef stock cubes, salt and bicarbonate of soda (just a teaspoon) and allowed to cook for 10minutes. After I drained and fluffed in a strainer and roasted in hot oil and garnished with garlic and rosemary, salt and a little paprika. Total roast time in my oven was about 45 minutes. I flipped potatoes over every 15 minutes. You can do this in the airfryer. To make the chicken skewers. I used chicken thighs and cut it into chunks and seasoned it using salt, thyme, curry powder, Cajun seasoning, Garlic powder, ginger powder and maggi seasoning. I then proceeded to add chilli infused oil, you can use any type of oil. I also included Suya spice (it’s a special west African spice that could be purchased in African or Caribbean stores) I arranged my meat on the skewers and allow to marinate for as long as I desired.
