Banh Beo (Vietnamese steamed rice cakes) In honor of Lunar New Year, or Tet, and in alignment with this month’s theme, celebrate (!), I’m excited to share a recipe for banh beo, or Vietnamese steamed rice cakes. Banh, broadly defined as savory or sweet cakes, is an important food for celebrations, especially for the new year. I wanted to highlight one of my favorite banhs! Banh beo is so so delicious. The soft and bouncy texture, the umami toppings, and of course, the fish sauce, make this dish a star! Chuc mung nam moi, 新年快樂, happy new year to you and yours ⚪️🧅🦐🫘🐟🐖🌶️🐲🐉 Ingredients (enough for 2-3 servings)* - 1 C rice flour - 1/8 C tapioca flour - 1/2 tsp salt - 2 C warm water - 1/2 C mung bean - 1 bunch scallion, chopped - Neutral oil  - Shrimp floss (see my other post for recipe by @jphamskitchen using @khomarket dried shrimp)  - Cha lua, thinly sliced (Vietnamese pork loaf/ham) - Nuoc mam cham (dipping fish sauce, see my other video for recipe) - Garnish: Vietnamese mints, fried shallots * Note: ingredients listed are not meant to be prescriptive. Adjust to your taste. Directions: 1. Make mung bean purée the fast way by boiling 25 mins. Strain and blend until smooth.  2. Make scallion oil by adding scallions to a pot of oil (5 tbsp) on low heat. Stir for 3-5 minutes and remove from heat.  3. To a mixing bowl, combine rice and tapioca flours, and salt. Add warm water and little at a time and whisk until batter is smooth. Set aside to bloom for 30 mins.  4. Make cakes in batches. Brush small round dishes with oil. Pour batter into dishes and steam each batch for 5 minutes. Don’t cover completely so as to help batter not boil over. Carefully scoop out cakes and continue until out of batter.  5. Plate with as many cakes as you’d like. To each cake, spread some mung bean purée, sprinkle on shrimp floss, and spoon over scallion oil. Add cha lua. Top cakes with fried shallots and mints.
