Rub the butter into the dry ingredients until a dough forms. This can take a few minutes. Once the dough is formed, cut it into rounds. Use a measuring spoon or bottle lid to press down into the cookie to create a dent. Freeze for at least an hour. The longer the better. Preheat your oven to 170°C. Bake for 10 minutes or until the edges start to brown, leave to cool completely before taking off the baking tray. You may need to press down the spoon/bottle lid if you find your dent has risen.
