Preheat oven to 350F and grease a 10 in cast iron skillet. 2. In a large bowl, microwave the chocolate and butter, stirring every 30 secs until melted. Stir in granular sugar substitute and vanilla. Add eggs one at a time and stir after each. Stir in almond flour a little at a time until mixed well. Set aside brownie batter.  3. To begin on the cookie dough, get a small bowl and mix the almond flour, baking soda, xanthan gum, and salt.  4. Now in a mixing bowl, add butter, granular sugar substitute, brown sugar substitute, and vanilla. Mix. Add egg and mix again. Add in the small bowl of almond flour mixture and mix a final time. Fold in dark chocolate chips. 5. Spread brownie batter across the skillet. Use a cookie scoop to drop cookie dough on the top of brownie batter. Bake for 25-30 mins. The edges of the cookies will be slightly brown but that is okay.  6. Let cool for a few mins to firm up but it’ll still be warm. Add a few scoops of Rebel vanilla ice cream and enjoy! #brookie #skilletcookie #cookieskillet #pizookie #healthydessert
