Many chefs, patisseries and boutiques now offer their own versions in different shapes and flavours — and I completely understand why. They’re nostalgic, delicious, and so fun and easy to make 🐻 You can make them in any shape you like. I also tempered the chocolate for that perfect snap, so you’ll find the easy steps below 🤍 And yes — I made the marshmallow mass in my @kenwood_uk Cooking Chef XL. It weighed everything directly into the bowl, heated to the exact temperature, and switched attachments for me. It honestly makes the whole process so quick and effortless 🤍 A cute little treat that looks impressive but is genuinely very easy to make. I hope you give them a try! 🍫🤍✨ RECIPE 🧸🤍✨ INGREDIENTS: 24 g gelatine powder (220 bloom) 144 g water (to bloom gelatine) 400 g sugar 120 g water (for syrup) 10–16 g vanilla paste 120 g liquid glucose / inverted syrup / corn syrup METHOD: 1.  Mix with water and gelatine, refrigerate 5–10 min. 2.  Combine sugar + water + vanilla + glucose → boil to 115–120°C. 3.  Add bloomed gelatine to sugar syrup, mix on low to combine. 4. Whip on high speed for 6–10 min until thick and glossy. 5.  Pour into a greased, dusted tray. Dust on top. Set for 6 hours or overnight. Alternatively, you can fill silicone moulds that have been coated with tempered chocolate, let the marshmallow set inside, and then seal the top with more chocolate. 6.  Cut into shapes, dust in icing sugar/corn starch. Or, if you used chocolate-coated moulds, simply de-mould your marshmallows once set and decorate as desired. Chocolate Tempering: Melt 160 g of milk chocolate to 45-50C, then 40 g callets, and stir until it cools to 29–30°C. Use in your moulds, add the marshmallow, and seal with more tempered chocolate.
