Fluffy honey butter milk bread dinner rolls ✨🍯 Ingredients  -  585g bread flour (4 1/2 cups) - 70g cup granulated sugar (1/3 cup) - 3g salt (1/2 tsp) - 10g active dry yeast (2 3/4 tsp) - 245ml Whole milk (1 cup) - 1 egg - 1 egg yolk - 57g butter, softened (1/4 cup, 4 tbsp) - Tangzhong paste Tangzhong paste - 60g water (4 tbsp) - 61g milk (4 tbsp) - 18g bread flour (2 tbsp) Honey butter - 57g unsalted butter, melted (1/4 cup) - 85g honey (1/4 cup) Instructions - In a small saucepan over medium heat combine flour, milk, and water. Whisk together until smooth it thickens.  Remove from heat and allow the Tangzhong to cool to room temperature while you prepare the rest of the dough. - In a small bowl, combine the warm milk and 1 tbsp sugar. Sprinkle the yeast over the milk mixture and stir gently to dissolve. Let it sit for 5-10 minutes until it becomes frothy. - In a large mixing bowl, combine the Tangzhong (cooled to room temperature), the yeast mixture, sugar, egg and egg yolk. Mix to combine. - Gradually add in flour, a little at a time, until a dough starts to form and add salt. You may need a bit more flour depending on the humidity, but the dough should be soft and slightly sticky. - Turn the dough out onto a lightly floured surface and knead for 8-10 minutes, or until the dough is smooth, elastic, and no longer sticky. Adding 1 tbsp of softened butter at a time until fully combined and elastic. You can also knead using a stand mixer with a dough hook for about 6-7 minutes. (Making sure it passes window pane test) - Shape the dough into a ball and place it in a lightly greased bowl. Cover with a damp kitchen towel or plastic wrap. Allow the dough to rise in a warm place for about 1-1.5 hours, or until doubled in size. - Once the dough has risen, punch it down to release the air. Turn the dough out onto a floured surface. - Divide the dough into 12 equal pieces. (90g each) Roll each piece into a smooth ball, tucking the edges underneath. - Arrange the dough balls in a greased 9x13-inch baking dish or round pan, placing them close together so they will bake into soft, pull-apart rolls. Cover the pan with a clean kitchen towel and let the rolls rise for 30-45 minutes, or until puffy and nearly doubled in size. Brush with egg wash before baking  - Preheat your oven to 375°F (190°C). - Bake the rolls for 18-20 minutes, or until golden brown on top - While the rolls are baking, prepare the honey butter by mixing the melted butter, honey, in a small bowl. Melt and mix until well combined  - Once the rolls are out of the oven, immediately brush them with the honey butter mixture for a sweet, glossy finish.
