Raita: - Grate the cucumber and drain excess juice. - Finely chop the chilli and coriander, and add them to a bowl along with salt and cumin. Mix well. - Refrigerate until ready to serve.  Harissa Vinaigrette: - Heat the Harissa in a pan for a minute. - Add vinegar and honey, stir well, and set aside until ready to serve. Lamb: - Separate the lamb into strands using your hands or a fork. - Mix in the harissa and cook in a pan for a minute. - Add water and remove from heat.  Assembly: - Toast tortillas in a separate pan. - Build your taco in the following order: tortilla, lamb, raita, harissa vinaigrette, pickled onion. - Garnish with coriander before serving.
