@micronationrebel: Buckeye Candy — Old-Time Peanut Butter Bites Ingredients • 1½ cups creamy peanut butter • ½ cup unsalted butter, softened • 1 teaspoon vanilla extract • 3–4 cups powdered sugar (until dough-like) • 2 cups semi-sweet chocolate chips • 1–2 tablespoons shortening (optional for smoother dipping) How to Make It Mix peanut butter, softened butter, and vanilla until creamy. Add powdered sugar gradually until a soft dough forms that you can roll by hand. Shape into small balls and chill on a parchment-lined tray for 20–30 minutes. Melt chocolate chips with a little shortening if desired. Insert a toothpick into each peanut butter ball, then dip only the bottom and sides into the chocolate, leaving a circle of peanut butter exposed on top — just like a real buckeye nut. Return to the tray and refrigerate until the chocolate sets. Remove toothpicks and smooth over the holes with your fingertip if desired.
