Anti-Inflammatory Locrio de Arenque (with Quinoa) Ingredients: • 1 cup quinoa, rinsed • 2 cups low-sodium chicken or vegetable broth (for flavor) • 1 pack smoked or salted herring, soaked and flaked • 1 small onion, diced • 1 small bell pepper, diced • 2 garlic cloves, minced • 1 tomato, chopped • 1 tsp oregano • 1 tsp smoked paprika • 1 tbsp olive oil • Salt + pepper to taste • Fresh cilantro or parsley to garnish • Avocado slices + tostones (fried in olive oil or air-fried) on the side Instructions: 1. Prep the herring: Soak or boil to remove excess salt, then shred into small pieces. 2. Cook the aromatics: In a pan, add olive oil, onion, garlic, tomato, and bell pepper. Sauté until soft. 3. Add the herring and seasonings (oregano, paprika, salt, and pepper). Stir well. 4. Add the rinsed quinoa and broth. Cover and simmer until quinoa is fluffy (about 15 minutes). 5.
