Spicy Thai Peanut Chicken (Crockpot) 🥜🍲🔥 Ingredients Chicken * 2 lbs chicken breasts or thighs * Salt, pepper, garlic powder, onion powder, smoked paprika Sauce: * 1 can lite coconut milk * ½ cup peanut butter * 3 tbsp Thai red curry paste (use less if you don’t like spice)  * 2 tbsp soy sauce (or coconut aminos) * 1–2 tbsp honey * 1 tbsp rice vinegar * 1 tbsp fish sauce * Juice of 1 lime * 3-5 garlic cloves, minced * 1 knob fresh ginger, grated (or ginger paste)  * ½ cup low sodium chicken broth Veggies + Toppings: * 1 red bell pepper, sliced * Crushed roasted peanuts * Extra lime wedges * Green onions, sliced * Carrots * Bean sprouts * Cucumbers (I marinated mine)  * Cilantro/Mint Instructions: 1. Make the Sauce In a mixing bowl, whisk together: * Coconut milk * Peanut butter * Thai curry paste * Soy sauce * Honey * Rice vinegar * Fish sauce * Lime juice * Garlic * Ginger * Chicken broth Whisk until smooth and combined. 3. Cook * Pour the sauce evenly over the chicken and bell pepper. * Cook on LOW 4.5 hours or HIGH 2.5–3 hours.  * Shred chicken slightly or leave whole (your choice). * Stir everything so the sauce coats well. Keep on warm and sauce will thicken.  5.
