Chai Spiced Applesauce & Fruit Leather 🍎 This is scalable based on how many apples you have on hand! I made a batch of about 15 pounds of apples, but taste depends on how long you let the spices steep! Ingredients: Apples, cored and chopped 1 Cinnamon Stick 2 Star Anise Pods 1 Tsp Whole Cloves 1 Tsp Cardamom (or 5 pods) 1 Tsp Whole Black Pepper Lemon juice with a splash of water Instructions: Add a splash of water and a squeeze of lemon into a large stock pot to prevent browning. Add in apples and heat on medium heat, stirring often until apples are soft and easily pierced with a fork. Transfer to a food mill (preferred!) or a blender to combine into a uniform texture. Add back into the pot. Tie all spices up in a cheesecloth bundle and toss in the pot, turning the temperature down to medium low and infuse for about 45 minutes. Taste every 15 to achieve your desired flavor! Eat as is or process using the waterbath method for 20 minutes. If you’d like to turn the sauce into fruit leather, spread evenly onto a lined dehydrator tray for 8 hours at 135° if using the oven use a lined baking try at your lowest setting and bake until the leather is tacky but not sticky and translucent. #applesauce #Recipe #lowwaste #slowliving #urbanhomestead #foodpreservation #canningandpreserving #vegan #denver #zerowaste

Pickled Jalapeños! 🌶️ I harvested well over 50 peppers before this last frost and a solid 20+ more made it through under a frost blanket. So LOTS of peppers to process! If you’re a baby like I am and don’t pop jalapeños like candy, this quick pickle will tone down their spice in such a fun way! For one quart: 2 Cups Sliced Fresh Jalapeños 1.5 Cups White Vinegar 1.5 Cups Water 1 Tbs Salt 1 Tbs Sugar 1 Tsp Mustard Seed 4 Cloves Garlic Pro Tip: I use 100% home-compostable gloves to make this process *way* less messy and to avoid pepper on my fingertips (so I don’t rub my eyes with it!) 🌶️ Pack jalapeños, garlic, and mustard into a quart jar, leaving about an inch of headspace. Then create the brine by combining water, vinegar, sugar and salt in a small pot and bringing to a boil. Pour hot brine over peppers, add a lid and let cool completely before transferring to the fridge for up to 3 months. You *can* waterbath can these, but I don’t personally like their texture afterward!
