Roll into 1.5-inch balls (about 16 meatballs). Heat 1 tbsp olive oil in a large skillet over medium heat. Add meatballs and sear for about 4–5 minutes, turning to brown all sides. They don’t have to be fully cooked—just browned. Remove and set aside. Cook the broccolini on a separate pan.  2. Make the Sauce: In the same skillet, add another tbsp of olive oil if needed. Sauté garlic and chicken bouillon for 30 seconds. Add tomato paste and cook for 1–2 minutes. Pour in chicken broth and simmer for 2–3 minutes. Stir in heavy cream, Parmesan, and Italian seasoning. Season with red pepper flakes, salt and pepper to taste. Bring to a gentle simmer, then return the meatballs to the skillet. Simmer uncovered for 3-4 minutes, or until the sauce is slightly thickened. 3. Garnish and Serve: Pour additional sauce overtop.
