Strawberry Swirl Cheesecake For the Crust: - 1 1/2 cups graham cracker crumbs - 1/3 cup granulated sugar - 1/2 cup unsalted butter, melted For the Cheesecake Filling: - 24 oz cream cheese, softened - 1 cup granulated sugar - 1 teaspoon vanilla extract - 3 large eggs - 1/3 cup sour cream For the Strawberry Swirl: - 1 cup fresh strawberries, hulled and sliced - 1/3 cup granulated sugar - 1 tablespoon lemon juice  Instructions: 1. Next, prepare the cheesecake filling. In a large bowl, beat the cream cheese until it is smooth. Add the sugar and vanilla extract, mixing until well combined. Then, add the eggs one at a time, mixing on low speed until just combined. Finally, stir in the sour cream until the mixture is smooth. 4. Now it's time to assemble the cheesecake. Pour half of the cheesecake filling into the cooled crust. Drop spoonfuls of the strawberry mixture over the cheesecake filling, and use a knife to swirl them together. Pour in the remaining cheesecake filling and top with the rest of the strawberry mixture, swirling again to combine. 5. Bake the cheesecake in the preheated oven for 55-65 minutes or until the center is set but still slightly jiggly. Once done, turn off the oven and crack the door open. Allow the cheesecake to cool in the oven for 1 hour. 6. After it has cooled, refrigerate the cheesecake for at least 4 hours or preferably overnight before serving. 7.
