Ingredients (2 pax): • 220g of your favourite pasta • 150g baby spinach (sweeter and softer) • 50g Parmesan cheese • 1 spoon olive oil • 2–3 spoons of pasta water • 2 garlic cloves (whole) • Optional: 1 spoon of ricotta or cream for a cheesier touch How to Make It: • In a pan, add olive oil and garlic. Sauté until golden. • Add spinach and cook for just 30 seconds until wilted. • Transfer to a blender with Parmesan, a splash of pasta water, and blend until silky smooth. • Cook your pasta al dente, mix in the spinach sauce, and let it simmer for 2 minutes to thicken. • Plate it up and top with extra Parmesan.
