Doner Kebab Tacos - Takeaway Tacos - Episode 7 Recipe makes 8 tacos Ingredients: Doner Meat: 800g ground lamb red pepper flakes 1 tsp ground cumin 1 tsp ground coriander 1 tsp smoked paprika 1 tsp garlic powder 1 tsp onion powder 1/2 tsp ground cinnamon 1 tbsp oregano 1 tsp salt 1/2 tsp pepper Sumac Onions: 1 red onion, thinly sliced 1 tbsp sumac 1/4 cup parsley Juice of 1 lemon 1 tbsp olive oil Salt to taste Garlic Sauce: 200g plain Greek yogurt 3 cloves garlic, minced 1 tbsp lemon juice 1 tbsp olive oil 1 tbsp mayonnaise 1 tsp Sumac 1 tsp sesame seeds 1 tsp thyme 1 tsp oregano 1 tsp marjoram Salt and pepper to taste Chilli Sauce: 1 red onion 1 tomato 1 red chilli 2 tbsp pul biber flakes 2 tbsp tomato paste 2 tbsp olive oil 1 clove garlic, minced 1 tbsp vinegar 1 tsp sugar Salt to taste Method: In a large bowl, combine the ground meat and spices, knead the mixture until it’s smooth and well-combined then form the mixture into a log shape and wrap tightly in foil. Bake at 180°C for 1 hour. Once cooked, place back in the oven for 5-10 mins to brown. Let it cool slightly before slicing into thin strips. For the sumac onions mix all the ingredients in a bowl and leave to onion side. For the garlic sauce, grind the spices together in a pestle and mortar then mix with the yogurt, minced garlic, lemon juice and mayonnaise For the chilli sauce add all the ingredients to a blender and blend until smooth, add to a pan with olive oil and cook for 2-3 minutes, stirring occasionally. Adjust seasoning to taste. Warm your tacos in a pan and dice some tomato, cucumber, and parsley. Breakfast Tacos with Hash Brown and Cheese Tortillas and a Pico de Gallo - Takeaway Tacos - Episode 5 Recipe for 8 tacos Ingredients: 8 slices of bacon 2 large potatoes 200g extra mature cheddar 6 eggs 2 avocado olive oil salt and pepper Pico de gallo: 3 tomatoes - diced and deseeded 1 red onion - diced 1/4 cup coriander - chopped 2 jalapeños - diced and deseeded 1 juice of lime 1 tsp salt Method: Place your bacon on an oven tray and bake at 180°C until crispy, about 30 minutes. For the pico de gallo, combine all the ingredients in a bowl and mix well. Set aside or refrigerate until you’re ready to assemble the tacos. Once the bacon is crispy, remove it from the oven and chop into small pieces. For the hash brown tortillas, grate your potato and squeeze out the excess moisture, then grate the cheese. In a pan with a little olive oil, sprinkle some grated potato and let it cook for a minute. Then, sprinkle over some grated cheese. Once the cheese melts and turns crispy, flip the tortilla and cook the other side for a minute. Whisk the eggs in a bowl, then cook in a pan on low heat with melted butter. Season and stir gently until the eggs reach your preferred consistency. Peel and slice the avocado. Now, assemble your tacos with avocado, scrambled eggs, crispy bacon, sriracha hot sauce, pico de gallo, and a sprinkle of chopped coriander. Enjoy! #breakfast #brunch #taco #tacos #series
