Enjoy!! #souprecipe #italianfood #italian #EasyRecipe #cookingtiktok   Olive Oil + Butter 1 Medium Onion (Finely Diced) 2 Carrots (Finely Diced) 1 Rib Celery (Finely Diced) Salt + Pepper 4 Cloves Garlic (Minced) 2-3 Springs Rosemary (Minced, Save Stems) 1 Bundle of Thyme (Tied for easy removal) 1 Bay Leaf 1-2 Tablespoons Tomato Paste 28oz Crushed Tomatoes 2 15oz Cans Cannelini Beans (Rinse and Drained) 1 Parm Rind (Optional) 4 Cups Chicken Stock 2 Cups Water 2 Tsp Better Than Bouillon 1 Cup Ditalini Butter 1. Sauté onion, carrots and celery in the oil and butter for about 7 mins. Season with salt and black pepper. 2. Add in the garlic, herbs and rosemary stems. Sauté 3 mins. 3. Add in the tomato paste and cook for 2 more minutes. 4. Add in the crushed tomatoes, beans, parm rind, stock and water. 5. Bring to a boil, and stir in the bouillon. Return to a boil, and reduce heat to simmer for 15mins with the lid cracked. 6. Optional: Using a ladle, scoop out about 1.5 cups of soup into a bowl, and immersion blend. Add the blended soup back to the pot to thicken.  7. Increase heat to medium and add in the Ditalini. Cook until the pasta is al dente, about 8 mins. 8. Stir in 1-2 Tbsp of butter. Turn off the heat.  9. Remove the rosemary stems, thyme bundle, bay leaf, and parm rind. Taste for seasoning. Add salt if needed. 10. Serve with crusty bread and top with freshly grated Parmigiano Reggiano.
