@notorious_foodie: Home Cooking Sessions with @Le Creuset : The Perfect Moussaka, all made with my 7.25qt Round Dutch Oven in Flamme Dorée. Beautiful layers of lamb ragu, pan-seared vegetables and a rich Greek béchamel. Full recipe below! #100YearsOfLeCreuset 😍👇🏽 - 1. Slice eggplant and zucchini into even pieces. Season with sea salt and leave for 30 mins. Drain, pat dry, set aside. 2. Bring your large casserole dish up to med-high heat. I used my beautiful new 7.25qt Round Dutch Oven in Flamme Dorée, in celebration of Le Creuset’s 100th anniversary. The new colour has a subtle sparkle worked into the finish - a stunning piece that’s now available worldwide! 3. Add 1.5tbsp neutral oil + 750g minced lamb. Season with sea salt + black pepp and cook till caramelised. Remove and set aside. 4. Add 1 diced onion, 2 cloves garlic, 3 bay leaves, 1 cinnamon stick - sauté 1min, then add 2tbsp tomato paste - sauté 1min. 5. Add 150ml red wine, 350ml passata + 100ml beef stock. Leave to simmer on medium-low (lid on) for 2h. 6. Bechamel: Add 50g unsalted butter to saucepan on med-heat. I used my new 2.25qt Le Creuset Saucepan in Flamme Dorée. Once melted, add 50g AP flour and whisk for 2 mins. 7. Stream in 450ml whole milk in batches, whisking in between. Season, then grate in 40g kefalotyri cheese and whisk till thickened ~3 mins. 8. Add 2 beaten egg yolks and whisk for 2 mins, then set aside. 9. Remove lid from ragu after 2h and leave to reduce 1 more hour. 10. Shallow fry the vegetables in olive oil for 2 mins each side till golden. 11. Assemble: eggplant down first, followed by the zucchini, lots of lamb ragu, all the béchamel + a final grating of cheese. 12. Bake at 200c for 45 minutes till golden brown. Rest for 30 minutes, then serve and enjoy! - Proper Moussaka, made with proper cookware that can be handed down to the next generation.
