When I first started sourdough, I was so overwhelmed and thought I needed to do everything by the book. All the recipes were like 2-3 days long and needed all these stretch and folds. NOPE. I don’t have time for that. And honestly, they never turned out anyways. I use this recipe literally 2-3 times a week. It always works.  1 cup of fed sourdough starter 1 1/4 - 1 1/2 cups of water 3-4 cups AP flour 1 tsp salt Swirl of honey 1/2 stick of butter In a stand mixer, add the sourdough starter and water. Mix. Next add flour. (Start with 3 cups). If it seems wet, add more flour, if it seems dry, add more water. Once a dough ball starts to form, add in salt, honey and softened butter. Mix again for 5-7 minutes.  Form into a ball and cover the bowl with a damp towel. Place in a warm area and let rise for 8-10 hours. Once risen, place on the counter and form into your preferred bread shape. Place in a banneton or a floured loaf pan, then cover again with a damp towel and let rise another 1-2 hours.  Preheat your Dutch oven for 30-45 minutes in a 425° oven. Then rub flour and score the top of the loaf. Place inside the Dutch oven. Bake for 25 minutes, then take the top off and bake another 25 minutes.
