(Note: if the dough is too sticky to roll, cover with plastic wrap and put into the refrigerator for 30 minutes!!) In a small bowl, combine the sugar and cinnamon together. Now it’s time to start rolling, scoop about 2 tablespoons or more of cookie dough and roll into a ball. Roll the dough ball into cinnamon sugar mixture, coat evenly.
