Whisk the eggs together in a large mixing bowl, then add the cottage cheese and vanilla extract and mix to combine. 2. Add the dry ingredients and gently fold together. If the batter is too thick, mix in 2-3 tbsp of milk. (The batter should be thick, but not feel too dry.) 3. Mix the cinnamon swirl ingredients together. 4. Heat a lightly oiled/buttered pan on medium heat and spoon some pancake batter (about 1/4 cup per pancake) into the pan. 5. Cook for 2-3 minutes on one side. Use a piping bag or ziplock bag with the corner cut out and add a swirl of the cinnamon sugar mixture.Then flip and cook an additional 1-2 minutes. 6. Serve with maple syrup or some glaze. TIP: make sure to cook the pancakes longer on the first side and cook them on medium-heat. (Don’t cook them on high heat!)
