On an unfloured counter, place the dough and divide it into 3, fill each one with a little grated butter and form 3 balls, just as I show in the video (rolling and folding until a ball forms). 8. In baskets or small bowl, let the loaf rest overnight (well covered). 9. The next morning, preheat the oven to 480°F. 10. Remove the 3 balls of dough from the refrigerator and score them. 11.
